Whenever September rolls around each year I immediately begin to think of all things pumpkin and squash. I love these vegetables and I love to make raviolis but there is someone who makes the best, and I mean the best, pumpkin raviolis. It was this week that I called my friend Vick at Fior d’Italia, located in Manchester, Vt, and asked if he was making his fresh pasta pumpkin raviolis. Sure enough, he was and I ordered in two cases. These raviolis are the best pumpkin raviolis I’ve ever had. Plump, not overly spiced, perfect amount of ricotta and pumpkin and sometimes Vick makes a fresh Sage Pasta for the raviolis. This time he did.
Why am I bringing them up? I’ll be serving them this weekend at the Taste of North Country in Glens Falls. Each year the Kiwanis in the Glens Falls/Queensbury area organize this event and it is very, very popular. The event features many restaurants and food professionals from the area. This will be our third year and we have a great time. Our other catering company, Adirondack BBQ, will also be there so patrons can have some excellent pulled pork too.
